Veggie Puffs

I had a couple requests to share the recipe... I adapted this from the Vegetable Cutlets recipe from Betty Crockers Indian Home Cooking.

You will need one package of frozen puff pastry, thawed.

Filling:

  • 1 Tbs. vegetable oil
  • 1 tsp. cumin seeds
  • 1 small red onion, chopped small
  • 1 Tbs. ginger paste
  • 2 cloves garlic, chopped
  • 16 ounce bag frozen mixed vegetables of choice
  • 1/4 cup chopped fresh cilantro
  • 2 Tbs. mango powder
  • salt, to taste
  • 1 tsp. ground cumin
  • 1 tsp. cayenne powder
  • 1/4 cup water
Method:

Heat oil in large skillet, when hot, add cumin seed and sizzle 30 seconds. Add onion, ginger and garlic, fry for 2 - 3 minutes, until onion is golden. Stir in remaining filling and fry 1 - 2 minutes. Add water, reduce heat, and cover, simmering for 10 minutes. If water remains, remove lid and simmer a few more minutes. Remove from heat and allow to cool. Stuff and bake! Eat and enjoy!

I love puffs, when ever i see one i reminds me of my mom as she always brought these from bakers when ever she went out. We kids were sure she would bring somthing like this for us.
