Boca 'changa's

These one's are made special for my boyfriend who can't eat meat...they are made with Boca burger and you really can't taste the difference!

Ingredients:

  • 1 onion, halved & sliced
  • 16 oz. can garbanzo beans, drained
  • 1 tsp. cumin seeds
  • 1 lb. ground Boca burger
  • 1 T oil, more if needed
  • 8 burrito size flour tortillas
  • shredded Mexican cheese
Spices to mix:
  • 1/4 tsp. cayenne powder
  • 1 tsp. salt
  • 1 tsp. paprika powder
  • 3/4 tsp. chicken or beef bullion
  • 1/4 tsp. sugar
  • 1 tsp. chili powder
  • 1/4 tsp. garlic powder
  • 1 tsp. cumin powder
Method:

Heat oil in skillet, when hot add cumin seeds and onion. Fry onion till it starts to turn golden, then add Boca burger. When burger gets warm add mixed spices. Fry for a few minutes, then add half of the can of garbanzo beans. Warm up mixture and remove from heat.

To assemble 'changa's, add some Boca mixture being careful not to overfill. Next add some cheese and roll up the tortillas by folding in sides then folding ends over. When finished folding, heat enough oil in a skillet to come half way up 'changa's and fry them till golden-brown. Serve with some lettuce and salsa and the rest of the garbanzo beans.

yumm, i love boca burgers too (don't like meat) and this certainly looks interesting, never tried with chickpeas, and your spice mix certainly is mouth-watering, i must try this soon...

I would have never thought chickpeas either but they were sitting there lonely in the can and I thought, why not...and it worked! Thanks for the comments!
