Chicken Curry for Chelsea

Whenever my daughter requests chicken, this is what she is asking for...she and her friend ate half the pot by themselves! The leftovers are also my daughters favorite breakfast the next day.

Ingredients:

  • 2 large chicken breasts, cubed
  • 2 large onions, halved & sliced
  • 2 large cloves garlic, chopped
  • 1 tbs. minced ginger
  • 3 Roma tomatoes, sliced
  • 1 large green pepper, chunked
  • 2 green chilies, sliced
  • 2 tbs. oil
  • 1/2 cup tomato sauce
  • 5 cardamom, crushed
  • 3 inch. cinnamon stick
  • 1 tsp. cumin seed
  • 3 cloves
  • 2 bay leaves
  • 2 black cardamoms, crushed
  • 1/2 tsp. fennel seeds
  • 1/2 tbs. coriander powder
  • 1 tsp. cumin powder
  • 1/2 tsp. paprika
  • 1/2 tsp. turmeric
  • 1 tsp. garam masala
  • few sprigs cilantro for garnish
Method:

Heat oil in a large pan, when hot add whole spices (cardamom, cinnamon, cumin seed, cloves, bay leaves, black cardamom, fennel seed) and sizzle for several seconds. Next, add onions till they start to turn gold, then add ginger, garlic and green chilies till everything is golden. Add chicken (I like to sprinkle with meat tenderizer) till it turns somewhat white, then add tomato sauce along with 1 cup water, tomatoes, green pepper and rest of spices. Simmer until chicken is done and sauce is reduced and thick. Garnish with cilantro, and serve.

I never make chicken curry from scratch and it's great to have a recipe that I can use...looks delish. :)

Sound absolutely delicious! Can I make a sugegstion that you try it next time with chicken on the bone like drumsticks or thighs? If you want boneless meat, diced thigh meat is the best. Chicken breasts are realy impenetrable to masalas and not really used in India.

Thank you mallika...I use the breasts out of pure laziness of not wanting to deal with the bones when I go to eat...my mom complains about this too as she loves the thighs :) I should try the boneless thigh meat.
