I just wanted to share a quick variation to one of my favorite cookie recipes. The original recipe can be found here, but instead of using regular peanut butter, I used Jif's Peanut Butter & Honey... and exchanged the kisses with red raspberry preserves...It made me think of a peanut butter and jelly sandwich!
Honey Peanut Butter Raspberry Cookies
Peanut Butter-Kiss Cookies & Meme
Despite always eating these cookies like crazy whenever I get the chance, I never tried to make them myself... Until I saw a recipe and how easy it was! I got the recipe from the all new Southern Living Cookbook.
Ingredients:
- 1 (14 ounce) can sweetened condensed milk
- 3/4 cup creamy peanut butter
- 2 cups all-purpose baking mix (Bisquick)
- 1 tsp. vanilla extract
- 1/4 cup sugar
- 1 (13 ounce) bag milk chocolate kisses
Beat condensed milk and peanut butter at medium speed with an electric mixer until creamy. Add baking mix and vanilla, beating at low speed just until blended. (I actually did this last part by hand as my mixer was already struggling)
Shape dough into 1 - inch balls; roll in sugar. Place on lightly greased baking sheet.
Bake at 350 degrees Fahrenheit for 11 minutes. Remove from oven, and immediately place a chocolate kiss in center of each cookie. Remove cookies to wire racks to cool. Makes 3 dozen.

Cake Mix Cookies
My mom found the recipe for these online somewhere ...they are really easy and great when you're in a hurry, but I am not a huge fan of them if I'm really wanting a good cookie. My daughter had a bake sale at school and I was able to make a ton of cookies easily with little fuss. All you do is take a box of cake mix, any flavor, and add 1/2 cup of vegetable oil and 2 eggs...if you want any nuts or chips in your cookies you add them to the dry mix before adding the oil and eggs. Depending on the size of your cookie , you can get about 18 -24, or at least that's what I usually get. I line a cookie sheet with foil, spray some oil, and bake them at 350 degrees until they just start to brown. I remove them right away onto a rack as they crisp easily, and I like softer cookies.

Coconut Macaroons & Happy Holidays!
I found the original recipe for these cookies on Nestle's website. Although they were really soft and tasty, they wanted to fall apart at the slightest touch...So I adjusted the recipe a small bit and now they hold together nicely without changing the texture or flavor.
Ingredients:
14 ounce sweetened flaked coconut
14 ounce sweetened condensed milk
2 tsp. vanilla extract
3 tbs. sifted flour
1 egg, slightly beaten
Method:
Combine sifted flour and flaked coconut in large bowl. In medium bowl, combine milk, vanilla and egg. Add the egg mixture to the coconut mixture until combined. Drop tablespoon size balls onto a foil lined baking sheet that has been slightly greased. Press each cookie lightly with back of spoon. Bake at 350 degrees for 10 - 14 minutes until only slightly browned on edges. Remove to wire racks to cool. Store, covered, at room temperature. Enjoy :)
