The recipe for the wings was adapted from Suvir Saran's American Masala... I changed some ingredients and methods...
Ingredients for wings:
- 1 ounce jaggery, grated (recipe calls for 5 tablespoons honey, but I was out)
- 2 tablespoons veg oil
- salt, to taste
- 1 teaspoon ground black pepper
- 1 teaspoon garam masala
- 1 teaspoon paprika
- 1/2 - 1 teaspoon chilli powder
- 1/2 teaspoon ground cumin
- 2 pounds chicken wings
- 1 tablespoon lime juice (recipes calls for white wine vinegar)
Preheat oven to 400º F. Arrange chicken wings in a baking dish (the book calls for roasting on a wire rack) and bake for about 35 minutes, checking to make sure the chicken is done. You can throw the wings under the broiler to make them crispier. Enjoy!
