This is simple, hardly a recipe, but turned out so delicious I thought I would share :) I wanted to cook something fast, so I grabbed a bag of frozen peppers and onions (Fajita mix), a small can of chicken, some soft taco size flour tortillas, and a bag of Colby/Monterey Jack Cheese. I sauteed the frozen veggies in oil along with the chicken, some onion and garlic powder, salt and Mrs. Dash's Southwest Chipotle Seasoning Blend. I cooked until the veggies were starting to look charred. I took them out of the pan and let them cool a bit. Then I melted butter in a skillet, and placed a tortilla in the skillet, topped with some filling and cheese, placed another tortilla on top, and brushed with more butter. When the bottom began to bubble and brown, I flipped the quesadilla until the other side was done. I placed in a warm oven until I finished the rest.
These potatoes were simply cut and coated in olive oil, salt, Mrs. Dash's Southwest Chipotle Seasoning Blend and baked at 425 degrees F. until crispy. At the end, I topped with a little queso cheese dip and let that melt all over the potatoes, and served.

Quesadillas are my quick fixes, i love them plain with pepper jack cheese & my kids will eat them too.. the potato sounds AWESOME.
