Salmon with Honey-Mustard Glaze

I found the recipe for this glaze in my Betty Crocker cookbook, but I didn't have any soy sauce or Dijon mustard on hand, so I used fish sauce and regular mustard instead. It turned out excellent and I wouldn't think twice about making this again with the substitutes. I made the rice using a package of fried rice seasoning, and replaced the soy sauce the package called for with fish sauce again.

Honey-Mustard Marinade:

1 tablespoon packed brown sugar
1 tablespoon butter or margarine, melted
1 tablespoon olive or vegetable oil
1 tablespoon honey
1 tablespoon fish sauce (or soy sauce)
1 tablespoon mustard (or Dijon mustard)
1 clove garlic, finely chopped

1 pound salmon fillets

Method:

1) In a small bowl, mix all marinade ingredients.

2) Place salmon in a shallow glass dish. Pour marinade over salmon. Cover and refrigerate at least 15 minutes to one hour.

3) Set oven to broil. Place salmon on rack in broiler pan. Broil with top 4 to 6 inches from medium heat 10 to 15 minutes, brushing 2 or 3 times with marinade, until salmon flakes easily with fork.

4) Enjoy!
