Pumpkin-Spice Cake

I found this recipe in an old Betty Crocker cookbook. It called for ginger powder, which I didn't have, so I substituted with pumpkin pie spice. Also, It called for cream cheese frosting which I left off, since I'm not a big fan. The cake is really sweet and moist all on It's own, so I don't think that a frosting is necessary anyway...just personal preference. It was eaten up in one day, luckily not by me...even my baby niece was running around with a huge piece in her tiny fist :)

Ingredients:

  • 4 large eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 15 - 16 ounce can pumpkin
  • 2 cups flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cloves
  • 1/2 tsp. groung ginger (or pumpkin pie spice)
  • 1 cup raisins
Method:

Heat oven to 350 degrees F. Grease a cake, or bundt pan. Beat eggs, sugar, oil and pumpkin in a large bowl until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Stir in raisins. Spread in pan. Bake 25 - 30 minutes or until light brown. Cool completely in pan on wire rack.

What a gorgeous cake. Though I love cream cheese frostings, I would also not use it, as this cake sounds amazing just on its own. I really like you idea of using pumpkin spices.
