I try to make the Spinach & Chicken a lot since my daughter will eat tons of it. I had to make a variation to the recipe since I was out of tomatoes, ginger and garlic. Instead, I used 8 ounces of tomato sauce and a couple teaspoons ginger/garlic paste. It was a little different but just as good and my daughter ate just as much! She wanted some corn too, so I tried something different. I put about one teaspoon cumin seeds in hot oil, then added half a chopped onion till golden. I put in an 8 ounce bag of frozen corn, along with 2 tbs. butter, salt, pepper and cayenne pepper to taste. I would definitely make it this way again.

This looks delicious :) I have a recipe for chicken and spinach but yours looks better! The corn is something that i WILL try soon...It just seems so easy and fast, yet, so good!...Do you use alot of asian spices in your dishes usually?
Spinach and chicken is indeed a great combination. That platter looks absolutely yummy. Bet licked the plate clean.

Sorry i just checked this comment now! to your question, No, i havent posted that recipe, BUT, i know that you did find the one i posted with ground meat, which is much tastier than my chicken one!
Looks delicious. Yeah i too always have to think when i make something if my daughter will like it or not. Sometimes i do get angry with her when she doesn't eat her vegetables.
Love to have the whole plate of rice, chicken, coen and the bread infront of it :-)

~ Happycook, I get downright frustrated sometimes trying to feed my daughter. There are times when she's so picky, or she'll eat it one time and not the next...grrrr!
