Pineapple Upside-Down Cake

I wanted some pineapple upside down cake for my birthday and was in search of a good recipe that used pineapple juice in the cake batter and found this recipe from Sarah Moulton. I use to have a recipe like this but have since lost it and am very happy to have found this one! I just used the juice that was in the can with the pineapples and left out the rum & cardamom to get the taste I remembered...though I think I'm gonna have to try that next time!

Keep your enthusiasms, and forget your birthdays ~ formula for youth!
