What to do with milk solids?

I'd love to know what everyone does with the milk solids after making ghee/clarified butter!

If it not so browned you can use it in making pound cake with them.

Browned or not, my mom used to mix in sugar and make a syrup with the solids. We'd eat it with rotis for breakfast....soooooo yummy!

I agree with Ambika...mix it with granulated sugar and eat it with hot paratha!!! This was my favorite childhood dessert!!!

( mind you its full of fat and calories;)

Mix in the gravies or mix in roties but sure it will be affecting the colour!

My mom boils it in hot water, strains it and makes rasam with it. It tastes yum!

My mother used to mix it with some sugar and we enjoyed it along with parathas. You can also add the milk solids left after ghee preparation to any dals or curries or mix it in the dough for roti/paratha preparation instead of oil for good flavor and nutrition.

Sugar is my choice too. I eat the sweetie stuff with roti. It is super yummy and has super calories :-)

Dear Sri
Here is what we do ( apart from eating with sugar).We eat the browned ones by mixing with hot rice, 2-3 hot green chili smashed into the rice and salt. Try it!
Let it be little on the dark brown sides (dark browning gives that typical smoky smell in ghee and the charaterstic smell of ghee ( coming from Butyraldehyde)is enhanced.

Boil the rasam and it will have a good aroma. Knead chapathi dough in it.

Mix the left over milk solids with condensed milk. Heat in a non stick pan till mixture leaves sides of the pan. Set it in a greased plate. Cut into squares. Let cool and enjoy. Makes yummy fudge like sweet.
