Pad Thai Sauce

Here is a Pad Thai sauce recipe that I have seen done the same way on quite a few websites... I like its simplicity and the taste is perfect! I like Chez Pim's post for explaining the whole process of making a really good Pad Thai. All I had was some broccoli, onion and wheat noodles so that's what I used. I like to keep this sauce on hand... It can be used with any variation of meat, vegetables, tofu, noodles, etc. This recipe is enough for us to use for a couple dinners. It makes about 2 cups sauce.

Ingredients:

  • 1/2 cup tamarind (I dissolved 2 tablespoons paste in 1/2 cup water)
  • 1/2 cup fish sauce (use soy sauce if you are vegetarian)
  • 1/3 cup white or brown sugar (or 1/2 cup palm sugar)
  • cayenne pepper powder, to desired intensity
Method:

Add tamarind, fish sauce and sugar to a small saucepan. Heat over a low flame until sugar dissolves and it starts to simmer. Remove from heat and add cayenne to desired heat level. Set aside and proceed with making Pad Thai or store in refrigerator. It keeps for a very long time!

looks nice and easy, I just thought of trying this out!!, I just saw the same one in PJ of ginger and garlic she has taken the sauce recipe from Mark bittman check out his video on this pad thai!!, meanwhile I will check your link!! I should definitely give this a try!!
