Noor's Chicken in Tomato and Lemon Sauce (Guest Post)

I am thrilled to be doing my first guest post, and couldn't be happier to be doing one for Noor over at Ya Salam Cooking! Looking at Noor's recipe index, you can see the diversity her blog has to offer, including African, Middle Eastern, European, Indian, Lebanese, and more! Her dishes remind me a lot of my mother's own cooking, as many are from the southern U.S. This dish here had my tummy growling from first glance, and really reminds me of home-cooked comfy filling food! Ingredients:

  • 2 tablespoons vegetable oil
  • I large whole chicken, cup up in 8 pieces
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • ½ teaspoon ground turmeric
  • ½ teaspoon chili pepper
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 1 (400 gram) can diced tomatoes
  • 1 tablespoon tomato paste
  • 1-½ cups water
  • juice from 1 lemon
  • 2 chicken bouillon cubes (I use Maggi)
Method:

1. In a large saute pan on medium-high heat add oil, brown chicken on
all sides, remove and set aside.Add onions and cook over medium heat
for 5-7 minutes or until onion is golden brown. Add garlic and spices
and stir for 1-2 minutes. Add tomatoes, tomato paste, water, lemon
juice and chicken bouillon cubes. Bring to boil and simmer for 3-4
minutes.

2. Return chicken pieces to the pan, cover and cook over low heat for
30 minutes or until chicken is tender. Serve with rice.

Yields: 4-6 servings
