Stir-Fried Chicken with Peppers

I got the original recipe for this from Betty Crocker's Indian Home Cooking. I changed it a bit to use what I had in the house and to make it a little easier. It tastes like nothing I've had before but It's really super good!

Ingredients:

  • 2 tbs. vegetable oil
  • 4 spring onions, white and green parts, sliced
  • 1 tbs. ginger paste or fresh chopped
  • 3 cloves garlic, chopped
  • 8 ounce can tomato sauce
  • 1 tbs. ground coriander
  • 1 tsp. ground cumin
  • salt to taste
  • 1/2 tsp. ground turmeric
  • 1/2 tsp. ground cayenne pepper
  • 1 tsp. garam masala
  • 1/4 tsp. ground fenugreek
  • 1 pound boneless chicken, cut up
  • 1 red & 1 green bell pepper, chopped
  • 1/2 cup water
  • 1/2 cup yogurt
Method:

Heat oil in large skillet. Add onion, ginger, and garlic until it starts to turn golden. Add ground coriander, cumin, turmeric, fenugreek and cayenne for a few minutes...then add chicken and peppers, cooking until the chicken turns white. Next add the tomato sauce and water, reducing heat and simmering until it starts to thicken. Add in the yogurt and garam masala and simmer until the oil shows...serve.
