Rajma

So, it happened the other day that I was in the mood for Rajma but I didn't have tomatoes, chilies or cream...that's when I brought out a can of tomatoes with green chilies already in them, and some canned milk. Then, I had to quick grind up some cumin seeds and I didn't feel like saving the rest of the powder, so I ended up adding close to three times more cumin than I normally would. I don't know why or how it happened, but this turned out to be some of the best Rajma I ever made! I always make it even easier by using canned beans.

Ingredients:

  • 2 tbs. ginger/garlic paste
  • 2 tbs. oil
  • 1 large onion
  • 15 ounce canned chopped tomatoes with green chilies
  • 1 tbs. coriander powder
  • at least 3 tsp. cumin powder
  • 1/2 tsp. cayenne powder
  • 1/4 tsp. turmeric
  • 30 ounces canned kidney beans
  • 1 cup water
  • 1/2 cup milk
  • 1/2 tsp. garam masala
Method:
Sautee onion in hot oil till browned. Add ginger/garlic paste for a few minutes. Add tomatoes and spices, except garam masala, simmering for five minutes. Add beans and water, simmer 15 to 20 minutes. Add milk and simmer to desired thickness. Add garam masala and serve.

You surely have whipped up a great meal although you lacked some ingredients. I don't add cream to mine. Maybe I'll try that next time.
