Spicy Shells & Cheese

My daughter wanted mac & cheese...I did not! Here's the compromise. It was a nice change from the ordinary...and luckily she enjoyed it too. Depending on how much cheese sauce you like on your mac & cheese, the amount of pasta can be adjusted. This version is VERY cheesy!

Ingredients:

  • 2 cups uncooked macaroni (7 ounces)
  • 1/4 cup margarine or butter
  • 1/4 cup flour
  • salt & pepper to taste
  • 2 cups milk
  • 2 cups shredded Mexican cheese (Taco/Nacho)
  • 1/3 cup chopped jalapeños
Method:

Heat oven to 350 degrees. Cook macaroni until soft, but not done. Drain. Melt margarine/butter in a medium saucepan over low heat. Stir in flour, salt & pepper. You can use a whisk to get the lumps out. Cook over low heat, while stirring, until mixture bubbles. Add milk. Heat to boiling while stirring constantly...using the whisk here really helps! Boil and stir one minute. Add cheese until melted. Remove from heat. Gently stir macaroni into the cheese, adding the jalapeños. Pour into a greased baking pan, about 9x9 size, and bake for about 20 or 25 minutes. At the end, put on the broiler and crisp up the top! Enjoy the change of pace :)
